Salmon Cakes

1 pound salmon
2 cloves garlic, crushed
1-inch piece of ginger, minced
2 egg whites
½ bunch mint
½ bunch cilantro
Salt and pepper to taste
Oil for frying

Place salmon, garlic, ginger, mint, cilantro, salt & pepper in the bowl of a food processor and pulse until well mixed. In a medium bowl, whisk egg whites until soft peak form, then combine with salmon mixture. Form into cakes. Heavy oil in fry pan. Fry cakes until crispy, about 5 minutes. Serve with chili sauce or remoulade.
