Tofu Remoulade
Ingredients:
½ pound tofu
1 tablespoon Dijon mustard
2 tablespoons lemon juice
1 tablespoon capers, drained
Salt and pepper
Olive oil
Method:
Put tofu in the bowl of the food processor and pulse
until smooth. Add Dijon mustard, lemon juice, salt
and pepper and pulse till blended. With blade spinning slowly pour in
some olive oil, about ¼ cup.
Blend till really smooth. Put in caper and pulse for
a second or two to mix. Serve.
